Available during Fall/Spring/Winter. The Cardoon is very similar to the Artichoke, but the leaves tend to be wider. The flowers are not edible like on an Artichoke, but the stems are. They die after flowering in summer, so they can be difficult to obtain during June and July, until they start growing again. In good condition, visible and minimal wear from use.
